SABATIER ,New Old Stock , 11 in Nogent ( Heavy ) Chefs Knife .1950s

New old stock 11 inch Sabatier Heavy Chefs Knife . CARBON STEEL , with a blackwood handle . Hand ground , hand fitted and , hand finished . Made in Thiers France in the 1950s . This is a heavy model with a larger handle and thicker spine . ( See the comparison to a standard 11 inch Nogent   of the same period from my collection( See photos ) .  These are essentially hand made knives ,all of which differ slightly ..THIS KNIFE IS ONE OF A KIND !   I am really struggling  to let go of this knife ,( I want to keep it in my collection )  its unique due to the blond streak in the handle ,which was probably why it was never sold in the first place . It is truly a beautiful knife with old world craftsmanship .
